Breakfast Casserole

I have wanted to try one of these before but never remembered to look up a recipe for one. So when I saw this one over at Our Best Bites I had to grab the recipe. I hope to try it soon!


Sausage and Egg Breakfast Casserole

6-8 slices white bread*
about 1/4 cup softened butter (just for buttering the bread)
4 cups grated Colby Jack Cheese**
12 oz Reduced fat Pork Sausage browned and drained
1 4 oz can diced green chilis (or 7 oz if you love them)
6 eggs
2 cups milk
1 tsp kosher salt
1/2 tsp paprika
1 tsp oregano
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp dry mustard

*Bread-Most recipies call for slightly dried out french bread or something similar, but white bread fresh from the bag works fine.
**Cheese-For extra kick use 2 c pepper jack and 2 cups cheddar. Do not use the pre-shredded bag cheese it doesn't melt as well.

Remove crusts from bread and lightly butter one side. place bread butter side down in a 9x13 baking dish so the bottom of the pan is covered with no big gaps. Grate cheese and spred evenly over the bread. Spread the sausage on top of that and top with green chilis. In a medium sized bowl whisk eggs. Add milk and seasonings and mix well. Slowly stir egg mixtur over the casserole (make sure to stir as pouring so the spices are evenly distributed).
Cover well and place in the refridgerator overnight.
In the morning preheat oven to 350 and bake for 50 - 60 minutes, until center is set and edges are golden brown. Let cool for 10 minutes so casserole is set and wont fall apart when serving. Cut into squares and serve warm.
